Coconut oil has been used for thousands of years as cooking oil particularly in Southeast Asian countries where it grows in abundance. In America it was even promoted in cookbooks of the 19th century. It is prized for its stability allowing it to remain fresh and not turn rancid quickly like many oils. Beginning several decades ago saturated fats received extensive bad publicity and their use declined until today very few people know about the potential benefits of including coconut oil in the diet. Early studies seemed to link saturated fats with increased cholesterol and risk of coronary heart disease. Those studies used hydrogenated oil which altered the oil and eliminated the essential fatty acids which give coconut oil its healthy benefits.

Research now shows the body needs some saturated fat for optimum health and virgin coconut oil is a good source since it contains easily digestible medium chain triglycerides (MCT).

Coconut oil may also have a positive impact on cholesterol levels. It is believed that coconut oil can help stimulate the thyroid which results in an enzymatic process converting cholesterol into helpful agents like DHEA and progesterone. Research shows using coconut oil in place of many other cooking oils can result in a better HDL/LDL cholesterol ratio. Recent studies looked at the effect of increasing levels of lauric acid and myristic acid in the diet. In these instances LDL cholesterol levels decline while HDL levels increased resulting in a better ratio of HDL to LDL. A review of studies conducted on people whose diets were high in coconut and coconut oil concluded that coconut oil does not lead to increased serum cholesterol or increased risk of death due to coronary heart disease. While many studies exist, more are needed before specific health benefits can be established. Organic Virgin Coconut Oil is a high grade, unrefined premium nutritional edible oil obtained from the first cold pressing of organic coconut (Cocos nucifera) kernels. Virgin Coconut Oil is naturally trans-fatty acid free and high in medium chain triglycerides (MCT).

This oil typically contains the following beneficial fatty acids per serving (natural variation may occur): Lauric Acid 6.5 g, Myristic Acid 2.4 g, Caprylic Acid 1.0 g, Gapric Acid 800 mg, Oleic Acid 800 mg and Linoleic Acid 200 mg.
